Make it Quick!

When you need a quick delicious meal, shrimp can’t be beat!  It’s packed with protein, low in calories, and cooks in minutes, which is great when you don’t have a lot of time or when you’re just too lazy tired to cook. Cilantro and lime make this dish outstanding!

Serve over rice or with a salad for a complete meal.

Cilantro Lime Shrimp

Ingredients:

2 teaspoons of olive oil
2 pounds of shrimp, peeled and deveined
6 cloves of garlic, crushed
1/3 cup fresh cilantro*, chopped
1 lime
Salt and pepper

Directions:

Heat a large non-stick frying pan over medium-high heat.
Add the oil to the pan. When the oil is hot add the shrimp.
Season with salt and pepper.
When the shrimp is cooked on one side (about 2-minutes) turn them over.
Add the garlic and sauté another minute or two until the shrimp is cooked through. Be careful not to overcook.
Remove the pan from the heat and squeeze the lime juice all over the shrimp.
Toss with cilantro and serve hot.

*Although I haven’t tried any substitutions, I’m sure if you aren’t a fan of cilantro you could substitute your favorite herb. Consider lemon basil shrimp instead of cilantro lime if that’s more to your liking.
