Looking for something a little different but still fresh, light and easy for a sweltering summer day? Try our Fruit and Grains Salad with Strawberry Vinaigrette. It’s great as a tasty side but can easily be turned into a delicious lunch or dinner by topping it with grilled chicken or salmon. Enjoy!

Ingredients:

For the strawberry vinaigrette:

2 tablespoons white wine vinegar
1 shallot, chopped
1/2 tbsp. honey
3 strawberries (or 2 if very large)
1 tablespoon lemon juice
1/3 cup grapeseed oil, or another oil you have on hand
1 tablespoon water
sea salt and freshly ground black pepper

For the salad:

4 cups mixed greens (spinach, arugula, kale)
1 cup cooked quinoa
1 cup cooked barley
1 cup blueberries
1 cup strawberries, halved if large
1/4 cup chopped, mixed herbs (basil, lemon balm, thyme, mint, chives)
1/2 cup toasted, chopped nuts (macadamia, pecans, slivered almonds)
freshly ground black pepper, to taste

Instructions

To make the Strawberry Vinaigrette:
Place everything in the jar of a blender and puree until smooth.

To make the salad:
Toss your lettuces together if you’re using more than one kind.  Spread the grains and fruits over the lettuce in any way that you want. Sprinkle everything with the herbs and nuts.  Serve with Strawberry Vinaigrette.
