One Pan Ranch Chicken Bake

 One Pan Ranch Chicken Bake

All the flavor of your favorite chicken and ranch combinations! This simple recipe comes together quickly and can be easily modified with vegetables you have on hand. Want to make it spicy? Add some red pepper flakes on top or drizzle it with hot sauce after baking! Enjoy!

Recipe makes 6 servings

Ingredients:

1.5 lbs boneless chicken breast, cut into cubes (can also use thighs or tenders)
2 cups baby potatoes
2 cups carrots, baby or large carrots cut into chunks
4 cups broccoli
2 tablespoons olive oil
1⁄2 cup grated parmesan cheese
1 packet Hidden Valley ranch dip mix (any ranch seasoning, about 4 tablespoons)
Salt and pepper to taste

Directions:

Preheat oven to 400 degrees.
Line baking sheet with foil.
Toss chicken, vegetables and oil in a bowl until coated.
Add cheese and ranch seasoning – toss until coated.
Spread evenly on the pan, and top with salt and pepper.
Bake for 25-27 minutes.

It doesn’t get simpler than that – one pot meals are perfect for weeknights.
