Grilled Pork Chops with Fresh Peach Relish: A Healthy Summer Dinner You’ll Make Again

Summer grilling doesn’t have to mean the same burgers and hot dogs every weekend. If you’re looking for a fresh, protein-packed meal that’s full of seasonal flavor, these Grilled Pork Chops with Fresh Peach Relish are the perfect addition to your dinner rotation.

Juicy grilled pork is coated in a smoky-sweet spice rub, then topped with a bright relish made from ripe peaches, red onion, lime, and jalapeño. The combination is sweet, savory, smoky, and just a little spicy—everything you want in a summer meal.

Not only is this recipe delicious, but it’s also loaded with high-quality protein to help support muscle recovery after your workouts while taking advantage of one of summer’s best fruits.

Ingredients 

For the Pork
6 (6-ounce) bone-in pork chops
Salt and freshly ground black pepper
1/4 cup light brown sugar
2 Tbsp. smoked paprika
1 tsp. ground cumin
1/2 tsp. garlic powder
1/2 tsp. cayenne pepper
Oil for grill grates

For the Peach Relish
4 medium peaches, pit removed and chopped
1 red onion chopped
Juice of 1 lime
1 medium jalapeno, seeds removed and chopped
½ teaspoon salt and pepper

Directions
1. Pat pork chops dry and season both sides with salt and pepper. Combine brown sugar, paprika, cumin, garlic and cayenne in a bowl. Rub on the pork and let sit for 1 hour.
2. Toss salsa ingredients together and let sit covered for at least 30 minutes. Flavors will intensify, so in the fridge overnight is ideal.
3. Preheat the grill and lightly oil the grates
4. Grill pork about 8-10 minutes until internal temperature reaches 145 degrees
5. Let sit for 5 minutes before serving
