One Pot Quinoa Taco Tuesday
We all love our traditional tortillas smothered in cheese and covered in toppings, but your waistline (and vegetarian friends) will thank you for this lightened up version of the tex-mex favorite. Meatless Monday or Taco Tuesday… make it on Friday for all we care, but just make sure you add it to your
recipe collection!
Protein packed with quinoa and beans, this one pot meal is SO versatile and can be added on top of a baked potato or salad, or simply eaten solo for a filling lunch or dinner. If you’ve got meat lovers in your family it can be easily mixed with chicken or beef as well.
Never cooked with quinoa before? It’s a grain very rich in fiber and protein, so it’s a filling replacement for rice in many recipes. Depending on the kind or brand you buy, it needs to be rinsed before cooking so be sure to read your bag when you buy it!
This recipe can also be mixed and matched with different types of beans based on your preferences. It tastes great with black beans for a slightly richer flavor, or white beans as well. Don’t be afraid to switch it up based on what you have on hand.

1 tablespoon olive oil
1/2 cup finely chopped onion
1 cup chopped sweet bell pepper
1 cup quinoa, rinsed
1 1/2 cups vegetable broth
1 can pinto beans, drained and rinsed (15-ounce)
1 can diced tomatoes, with the juice (14.5 oz)
1 cup corn kernels
2 teaspoon chili powder
1 teaspoon cumin
Kosher salt and freshly ground black pepper, to taste
Directions
Add the oil, onion and pepper to a large skillet over medium heat, and cook 5 minutes until soft.
Add the rest of the ingredients to the skillet and cover to cook for 20 minutes, or until broth is
absorbed.
Remove from heat, stir to combine, and add additional toppings. Enjoy!
Additional topping ideas: Avocado, cheese, taco meat, shredded chicken, scallions, olives, jalapenos.
It doesn’t get simpler than that – one pot meals are perfect for weeknights. Taco Tuesday just got even better!
