We know what you’re thinking… “Cauliflower PIZZA… really?”

Trust us!  Not only is cauliflower pizza crust the key to a guilt free meal, it’s also pretty easy to make!

And you’ll be amazed that it really tastes NOTHING like cauliflower.

The key to the crust is getting the right consistency.  (It’s going to be like riding a bike for the first time; you may wobble, you might even fall . . . but keep trying!)

Once you master the cauliflower pizza crust, the pizza possibilities will be endless!

Ingredients

Crust Ingredients

1 head of cauliflower

1 1/2 cups mozzarella/cheddar cheese mixture

1 teaspoon dried oregano

¼ tsp of salt

¼ tsp of pepper

1 teaspoon crushed garlic

1 egg

Preheat oven and pizza stone or baking sheet to 425.

Step 1:

Cut the florets into chunks and pulse in the food processor. You want it to look like cauliflower “snow”.

(That’s a scary word to use, especially after our winter!!)

Step 2:

Heat your “snow” in the microwave on high for about 6 – 8 minutes.  Let it sit until it’s cool enough to handle.

Step 3:

Cauliflower contains lots of water, so wrap your cooked cauliflower in cheesecloth and wring it out well.

  (This process is important.  Don’t skip it or you’ll end up with a watery mess!)

Step 4:

Place your cauliflower in a bowl along with the remaining ingredients.  Use your hands to mix everything together.  Then form the dough into a crust on your oiled parchment paper. Pat it down thoroughly; you want it nice and tightly formed together.

Try not to make it too thick, or so thin that it doesn’t hold together.

Carefully slide the crust, parchment paper and all, on to your hot pizza stone or baking sheet in the oven. Bake for 8 – 11 minutes or until golden brown.

Step 5:

Be creative!  Top with any or all of the ingredients you normally enjoy on pizza.  Put back into the oven until the cheese is melted.

Enjoy your pizza knowing that second piece is pretty close to “guilt” free!
