Looking for a simple, quick and delicious dish ? All you need are a few herbs and spices, a lemon, some olive oil, and of course, the chicken ! The amount of spices you use is completely up to you. You can add more or less according to your taste. You can even change up the herbs and spices and have a different dish every day. Double the recipe and serve the leftovers over a green salad, or chop and turn into chicken salad. The possibilities are endless… Plus, with just 10 minutes to prep and 15 minutes to cook, dinner’s on the table in less than a half hour ! What’s better than that ?
Simple Lemon Herb Chicken
2 skinless, boneless chicken breast halves
salt and pepper to taste
1 tablespoon olive oil
1 pinch dried oregano – or – 1 pinch each of crushed rosemary, garlic powder, and crushed red pepper flakes – or – 1 pinch each of garlic powder, lemon pepper and basil – or – get creative and use your favorite flavor combo. Garlic and italian seasoning? Sure! A little parsley and some thyme? Why not? Just go with what you have on hand.
Pound the chicken to an even thickness, or if you’re serving it over a salad, cut it into strips.
Cut lemon in half, and squeeze juice from 1/2 lemon on chicken. Season with salt and pepper and your herbs/spices of choice.
Let chicken sit while you heat oil in a small skillet over medium low heat.
When the oil is hot, put the chicken in skillet. As you sauté the chicken, add the juice from the other 1/2 lemon.
Sauté for 5 to 10 minutes each side (less if you’ve cut it into strips), or until juices run clear.
This is great served with wild rice and steamed broccoli or in a wrap with lettuce and smashed avocado. Enjoy !
