Slow-Cooker “Dump Dinners”
Have you found yourself skipping workouts because your “to-do” list is endless, and you’ve got to get everything done ? Save yourself some time and “dump” everything in your crock pot and head to the gym! Let it cook for a few hours and BAM! tasty homemade Slow Cooker Chicken Burritos with hardly any mess! Or delicious Beef and Broccoli that’s better than take-out! That’s right, let your crock pot do the work while you take a class, run a few miles on the treadmill or workout with your trainer.
Your family will think you slaved away in the kitchen. No one needs to be the wiser. We won’t tell!!
SLOW-COOKER SHREDDED CHICKEN TACOS AND BURRITOS
Ingredients
1 1/2 lbs boneless skinless chicken breasts
10 ounce can of Rotel with lime juice and cilantro OR Original Rotel with diced green chilies
1 packet (1 ounce) of your favorite taco seasoning
1 1/4 cups chicken broth
Taco shells, hard or soft, or flour burrito tortillas
Suggested toppings – lettuce, tomato, cheddar cheese, olives, sour cream, guacamole, fresh lime, cilantro, salsa
Directions
Lightly spray slow-cooker with non-stick cooking spray.
Place chicken in single layer.
In a medium size bowl, mix broth, taco seasoning and a can of Rotel.
Pour mixture over chicken and cook on low for 6 to 8 hours, or on high for 4 to 6 hours. (Cooking times may vary depending on your slow cooker, adjust accordingly.)
The only thing you’ll need to do when you get home from the gym is simply shred the chicken using two forks and prep the extras; veggies, sour cream, guacamole to name a few. Serve in taco shells or flour tortillas.

Tips
This recipe is not spicy if you use Rotel with lime juice and cilantro. For a spicier version, I recommend using Original Rotel with diced green chilies. You can also add other spices to kick up the heat. This recipe is versatile and easy to adapt to your taste.
SLOW COOKER BEEF AND BROCCOLI
The best part about this is that there is absolutely no sautéing, no stirring, no frying or oil splatter of any kind. Just throw it all in the slow cooker and that’s it! How easy is that?
Ingredients
1 cup beef broth
1/4 cup soy sauce
1/4 cup oyster sauce
1/4 cup Light Brown Sugar
1 tablespoon sesame oil
3 cloves garlic, minced
2 pounds boneless beef chuck roast, thinly sliced
2 tablespoons cornstarch
2 heads broccoli, cut into florets
Directions
In a medium bowl, whisk together beef broth, soy sauce, oyster sauce, sugar, sesame oil and garlic.
Lightly spray slow-cooker with non-stick cooking spray.
Place beef into a 6-qt slow cooker. Add sauce mixture and gently toss to combine. Cover and cook on low heat for 90 minutes.
In a small bowl, whisk together 1/4 cup water and cornstarch.
Stir in cornstarch mixture and broccoli into the slow cooker. Cover and cook on high heat for an additional 30 minutes.
Serve immediately.
