Breakfast Is Served!
Mix up a batch of these yummy pineapple coconut protein muffins and breakfast is served all week long!
Pineapple Coconut Protein Muffin Ingredients
¾ cup oat flour or almond flour
¾ cup vanilla protein powder
1 tsp baking powder
2 tbsp. unsweetened coconut flakes
1 egg
1 tsp vanilla extract
¼ cup plain low- fat Greek yogurt or 1 mashed banana
2 tbsp. maple syrup
½ cup unsweetened almond milk
½ cup fresh pineapple diced into small pieces
Pineapple Coconut Protein Muffin Instructions
Pre- heat oven to 350 degrees.
Combine wet ingredients and dry ingredients in separate bowls.
Add wet ingredients into the dry ingredients.
Gently fold pineapple pieces into the mixture.
Spray muffin tin with oil or use cupcake liners.
Pour batter evenly into muffin tin.
If you want to get fancy, sprinkle a tiny bit more coconut on top before baking.
Bake for 20-25 minutes.
Serve and enjoy!
