It may be February with snow on the ground, but who says you can’t still add a little tropical flair into your meal prep?! There’s nothing wrong with traditional turkey meatballs, but if you’re looking for something a little different – give these a try.
These meatballs are packed with protein, so they’re great for after your workout! They have the perfect combo of sweet and spicy – a definite crowd pleaser for you and your family. Feel free to adjust the spiciness to your liking. Check out the recipe and step by step instructions to have these on your dinner table in no time!
Recipe modified from The Whole Smith’s Mango and Jalapeño Meatballs.
Ingredients
2lbs ground turkey (1lb 99% lean, 1lb 93% lean)
½ cup finely chopped onion
1 cup frozen mango
2 eggs
1 tsp salt
1 tsp black pepper
1 tbsp chili powder
½ tsp garlic powder
1 tbsp almond flour
Preheat oven to 375.
Grease baking sheets lightly with olive oil
Place frozen mango in food processor until finely chopped
Add all ingredients to a bowl and mix until well combined.
Once combined, form into balls about the size of a golf ball, and place on the lined cookie sheet. The size of the meatballs is your preference, just adjust cooking time for larger servings.
Bake for 20 minutes, then broil for 2-3 minutes for a golden-brown top.
