Butternut Squash & Bacon Flatbread
There’s nothing like biting into a satisfying slice of pizza, but sometimes it doesn’t quite fit into your
nutrition goals. There’s no reason you can’t have the real stuff once in a while – but sometimes you
might want to find a healthier option. This high fiber flatbread option is one you will want to try – piled with herb roasted butternut squash and crumbled bacon. You won’t believe each serving has 13g of fiber and will fill you up with over 25g of protein too!

Ingredients
Roasted Butternut Squash:
2 lb butternut squash peeled and chopped into small cubes
2 tsp olive oil spray
1 ½ tsp kosher salt
½ tsp dried thyme
½ tsp dried rosemary
¼ tsp pepper
Caramelized Onion:
2 cup onion sliced thinly
1 tsp olive oil spray
Pinch of salt
Herbed Cottage Cheese Sauce:
1 cup low-fat cottage cheese
⅓ cup tomato fresh or canned
3 Tbsp chicken broth
3 Tbsp parmesan cheese
1 frozen garlic cube or minced clove
¼ tsp dried thyme
¼ tsp dried rosemary
¼ tsp salt
Additional Ingredients:
12 Joseph’s whole grain pita’s
6 oz mozzarella cheese grated
6 pieces of bacon cooked
Optional toppings:
Arugula, hot honey, chopped apple
Instructions:
1. Preheat oven to 425
2. Toss squash with spices and olive oil. Roast for 25-30 minutes
3. While the squash roasts, add onion to a pan with oil stirring often. After 5 minutes, once fragrant, reduce heat and cover for 20 minutes. Stir often until they are tender
4. While the squash and onions cook, blend together ingredients for the sauce until smooth
5. On a large sheet pan, assemble your pitas: On each pita, layer sauce, mozzarella cheese, onion, squash, and one piece of crumbled bacon
7. Roast for 10 minutes. When it’s removed from the oven, top with apple, hot honey and arugula. Enjoy!
