You don’t have to live in Texas to appreciate big flavor!  Cowboy Caviar is packed with colorful, fresh ingredients, which also happen to be healthy. Naturally vegan and gluten free, this dish is so tasty, it’s hard to believe it’s just a few easy ingredients that you throw in a bowl and mix together!   The flavor really improves after a couple of hours in the fridge, but if you’re pressed for time, you can whip this up right before your guests arrive.  It’s that easy 🙂

INGREDIENTS:

1/2 cup olive oil

1 tablespoon of sugar (more or less to taste)

1/3 cup white wine vinegar

1 teaspoon chili powder

½ teaspoon of cumin

1 teaspoon salt

1 pint of cherry tomatoes cut in quarters

1 (15 ounce) can black-eyed peas, rinsed and drained

1 (15 ounce) can black beans, rinsed and drained

1 (11 ounce) can super sweet corn, drained (see notes)

2 chopped cloves of garlic

1 red onion, diced

1/2 cup diced green bell pepper

1/2 cup diced red bell pepper

1 avocado diced

 1 cup chopped cilantro (1 bunch)

In a large bowl, whisk together the olive oil, sugar, white wine vinegar, chili powder, cumin and salt. Add tomatoes, black-eyed peas, beans, corn, red onion, garlic and bell peppers. Stir to combine.

Stir in cilantro. Cover and chill at least 1 hour or overnight to blend flavors. Add avocado right before serving.  Serve chilled or at room temperature.

Don’t forget the tortilla chips !!
