30 Minute Hamburger Potato Soup
Soup season adds so much versatility to meal time, because there’s so many different combinations of flavors to experiment with. In this hamburger soup, the ground beef and tender potatoes come together with fresh veggies in just 30 minutes of simmer time. It’s perfect for these chilly late winter and early spring nights.
This recipe is written using fresh vegetables for the best flavor and texture – but real life can get busy. If canned veggies are what you have on hand, they’ll work just fine and can save you valuable prep time.
One of the best things about this dish is how flexible it is. Feel free to swap in different vegetables or proteins based on what’s already in your fridge or pantry. It’s a great way to use up ingredients and avoid food waste without sacrificing flavor.
Follow the recipe as written or make it your own—either way, you’ll end up with a simple, satisfying weeknight dinner. Bonus: it freezes beautifully, so you can stash leftovers away for an easy meal later on.

Ingredients
- 1 pound lean ground beef or turkey
- ½ white or yellow onion, diced
- 32 ounces beef stock or broth
- 2 medium potatoes, peeled and diced
- 2 medium carrots, peeled and diced
- 1 cup fresh green beans, sliced into thirds
- 14½ ounces can diced tomatoes, fire-roasted
- 2 tablespoons tomato paste
- 1 tablespoon garlic, minced
- 1 teaspoon thyme, dried
- 1 teaspoon oregano, dried
- 1 teaspoon salt
- 1 teaspoon onion powder
- ½ teaspoon black pepper
Directions
- In a large pot saute onion and ground meat until meat is fully browned.
- Add all other ingredients to the pot and simmer 20-25 minutes until vegetables are tender
