Hearty Meatball & Veggie Soup
If you’re looking for a hearty soup to get you through a cold winter weekend, this one is it. A light tomato broth, with tender vegetables and meatballs make this soup filling and completely satisfying.
Feel free to get creative with mixing up the vegetables you have on hand – either way it’s full of flavor and great for meal prep or feeding a crowd.
Ingredients
1 1/2 pound lean ground beef, chicken, or turkey
1 egg, lightly whisked
1/2 cup freshly grated parmesan cheese
1/3 cup unseasoned bread crumbs
1 tablespoon oregano
1 teaspoon paprika
1 cup chopped parsley leaves
4 garlic cloves, minced
Salt and pepper to taste
1 small onion, chopped
2 carrots, chopped
2 celery stalks, chopped
1 small green bell pepper, chopped
5 to 6 cups (40-48 ounces) beef, chicken or vegetable broth
1 (28-ounce) can peeled tomatoes with juices
3/4 cup small pasta like ditalini or small shells uncooked
Directions
Make meatballs by combining meat, egg, parmesan, and bread crumbs. Add ½ tablespoon oregano, ½ teaspoon paprika, ½ cup parsley and 2 garlic cloves. Mix everything well.
Lightly grease a sheet pan and roll meatballs into 1 inch round balls.
Place the meatballs in the oven for 5 minutes to broil. (They will not be fully cooked, but will fully cook in the soup)
In a large pot over medium heat add 2 tablespoons of olive oil, onions, carrots, celery and pepper. Mix and stir for 5 minutes
Add broth, tomatoes, remaining oregano, paprika and salt and pepper to the pot. Let simmer for 10 minutes
Add the pasta and meatballs to the pot, and finish cooking (about 10-12 minutes)
Transfer to serving bowls and enjoy!
