One Pot Stir-Fry

One Pot Stir-Fry

This is a one pot, easy stir fry that comes together in less than 30 minutes. It has all the flavors of a rich stir fry and can be paired with rice or noodles, but is also already filled with colorful veggies and savory ground beef.

Ingredients:

Stir-Fry Sauce
½ cup less sodium soy sauce
2 tablespoons sriracha
1 tablespoon rice wine vinegar
2 teaspoons brown sugar
1.5 teaspoons fish sauce
1.5 teaspoons sesame oil

Ground Beef Stir-Fry
2 tablespoons olive oil
1 pound extra lean ground beef (90/10)
1 yellow onion, peeled and thinly sliced
4 cloves minced garlic
1 tablespoon minced ginger
2 cups chopped or shredded cabbage
1 large bell pepper, cut into thin strips
2 large carrots, shredded

 

Directions:
1. Combine soy sauce, sriracha, vinegar, brown sugar, fish sauce and sesame oil and whisk together until combined. Set aside.
2. Turn heat on the stove to medium low and add 1 tablespoon of olive oil to a large saucepan. Once heated, add the ground beef and cook until no longer pink. Break apart into small crumbles while cooking. This should take about 8-10 minutes. T ransfer meat to a plate and let rest.
3. Add remaining tablespoon of oil to pan and add garlic, ginger, onion, cabbage, pepper and carrots. Saute for 2-3 minutes until they begin to soften.
4. Add the ground beef back in, along with the stir fry sauce and combine together, cooking an additional 2 minutes.
5. Eat as is, or enjoy over noodles or rice!
