Protein Crunch Salad
There’s nothing more satisfying than a cold, crunchy salad on a hot summer day. This one is packed with protein and tossed in a light homemade dressing. We would argue it could even be served at a summer barbecue, and all your gym buddies would REALLY appreciate you. Jackpot! 🙂
Ingredients:
2 cups cooked quinoa
1.5 cups shredded chicken (rotisserie or precooked chicken breast)
1 cup chopped cucumber
15oz can of chick peas, drained
¼ cup chopped fresh parsley
2 tbsp chopped fresh mint
½ cup diced red onion
½ cup crumbled feta
½ cup shelled pistachios
Dressing:
⅓ cup extra virgin olive oil
2 cloves minced garlic
Juice from 1 lemon
1 tsp dijon mustard
1 tsp maple syrup
½ tsp salt
¼ tsp pepper
Directions:
1. Whisk all dressing ingredients together in a medium bowl. Set aside
2. Combine all the salad ingredients together in a large bowl and mix..
3.Pour the dressing over the top of the salad and toss to combine.
4. Enjoy!
